Lupin Hummus & Hemp Seed Crackers

Often advertising tries to convince us that we do not have time to cook, and that the only way to avoid wastes of time is to buy processed food. It's not true! With this simple recipe you will see how cooking good whole grain spelt crackers and  fresh lupin hummus is easy and fast.

Lupin Hummus & Hemp Seed Crackers
Ingredients
Crackers
  • 1cup whole spelt flour
  • 2 tablespoons hemp flour
  • 2 tablespoons  shelled hemp seeds
  • 1 tablespoon toasted sesam seeds
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon baking soda
  • 1/2 cup water
Hummus
  • 1 cup shelled lupins
  • juice of half a lemon
  • 2 tablespoons extra virgin oil
  • 5/6 fresh basil leaves

Preparation
Crackers
  • In a large bowl combine all dry ingredients and mix well. Add water and knead until you get a ball of dough.
  • Roll out the dough with a rolling pin.
  • Use a round pastry cutter (2,9 inches wide) to cut out the crackers. You will get about 25 pieces.
  • Arrange them in the baking pan with parchment paper and bake for about 20 minutes at 356°F. After ten minutes open the oven an quickly flip the crackers.

Hummus
  • Place all ingredients in a blender and blend until mixture is smooth. If necessary add a tablespoon of water to make the mixture smoother.

Spesso il mondo della pubblicità cerca di convincerci che non abbiamo tempo per cucinare e che ricorrere ai cibi pronti sia assolutamente necessario pena tempi lunghissimi di preparazione e la probabilità di un risultato incerto. Non è vero! Con questa ricetta vedrete come sarà semplice  e veloce preparare degli ottimi crackers integrali di farro da abbinare ad un fresco ed estivo hummus di lupini.

Hummus di Lupini & Crackers di semi di Lino
Ingredienti
Crackers
  • 120 gr di farina di farro integrale
  • 2 cucchiai di farina di canapa
  • 2 cucchiai di semi di canapa decorticati
  • 1 cucchiaio di semi di sesamo tostati
  • 1/2 cucchiaino di sale
  • 1/2 cucchiaino di bicarbonato
  • 120 ml di acqua
Hummus
  • 200 gr di lupini sgusciati
  • il succo di mezzo limone
  • 2 cucchiai di olio extravergine di oliva
  • 5/6 foglie di basilico fresco

Preparazione
Crackers
  • In una ciotola capiente unire tutti gli ingredienti secchi e mischiare bene. Aggiungere l'acqua e impastare il tutto fino ad ottenere un panetto di pasta.
  • Stendere l'impasto con un mattarello.
  • Con un coppa pasta circolare (7,5 cm di diametro) ritagliare i crackers. Si otterranno circa 25 pezzi.
  • Disporli nella teglia con carta da forno e infornare per circa 20 minuti a 180°C. Girare i crackers a metà cottura.
Hummus
  • Mettere tutti gli ingredienti in un frullatore e frullare fino ad ottenere un composto omogeneo. Se necessario aggiungere un cucchiaio di acqua per facilitare l'operazione.

Mini Green Pancakes


A quick and easy recipe to prepare simple and good vegan savory pancakes, which are useful to warm up on these early winter days and great for Sunday brunch with friends :)
Mini Green Pancakes

Ingredients
  • 3.50 oz. chickpea flour
  • 1 tablespoon spinach flour
  • 1/2 teaspoon salt
  • 7 oz. water
  • 2 tablespoons toasted sesame seeds
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon dill

Preparation
  • Put the flour, salt, sesame seeds, turmeric and dill in a bowl and mix well. Add water a little at a time, taking care not to form lumps and mix to obtain a homogeneous mixture.
  • Allow to stand for at least two hours.
  • Heat up a pan with a little extra virgin olive oil and pour about a tablespoon of the mixture cooking it well on both sides, so you will get about 12 pancakes.
  • For the presentation I used extra virgin olive oil, sesame seeds and dill.

Una ricetta semplice e veloce per preparare sani e gustosi pancakes vegani salati, utili per scaldarsi in queste prime giornate invernali e ottimi per brunch domenicali con gli amici :)

Mini Pancakes Verdi

Ingredienti
  • 100 gr di farina di ceci
  • 1 cucchiaio di farina di spinaci
  • mezzo cucchiaino di sale
  • 200 ml di acqua
  • 2 cucchiai di semi di sesamo tostati
  • 1/2 cucchiaino di curcuma
  • 1/2 cucchiaino di aneto
Preparazione
  • Mettere le farine, il sale, i semi di sesamo, la curcuma e l'aneto in una terrina e mescolare bene. Aggiungere l'acqua poco alla volta, facendo attenzione a non formare grumi e mescolare fino ad ottenere un composto omogeneo.
  • Lasciare riposare per almeno 2 ore.
  • Mettere sul fuoco una padella antiaderente con poco olio extravergine d'oliva e versare un cucchiaio del composto cuocendolo bene da entrambi i lati, si otterranno così circa 12 pancakes.
  • Per la presentazione ho utilizzato olio extravergine d'oliva, semi di sesamo e aneto.
