Raw Chocolate Bar















The holidays are coming and what better way to celebrate this season with a good homemade chocolate bar, with raw ingredients, full of flavor and rich in nutrients?
To make it as a sweetener I did not use sugar, but maple syrup and powdered lucuma instead.
The highland Peruvian lucuma is a fruit that has a sweet taste with a hint of vanilla and is an excellent natural sweetener. It's  rich in complex carbohydrates, phosphorus, calcium, beta carotene and has a low glycemic index.

Raw Chocolate Bar
Ingredients
  • 3.5 onces raw organic cocoa liquor
  • 3.5 onces raw organic cocoa butter
  • 1.4 onces raw cocoa powder
  • 1.4 onces raw carob powder
  • 4 tablespoons maple syrup
  • 1 teaspoon ground lucuma
  • 1 teaspoon ground cinnamon
  • a pinch of salt

Preparation
  • Cook in bain-marie cocoa paste and cocoa butter over very low heat and melt the entire mix well, it will take about half an hour. It's important never to exceed 107° F in order to keep important nutrients in cocoa as magnesium, flavonoids, enzymes and aminoacids intact. You can use a cooking thermometer to monitor the temperature.
  • Slowly stirring with the help of a whip, add cocoa powder, carob powder and salt.
  • Turn off the heat and add the maca, cinnamon and maple syrup, stirring constantly.
  • Pour the mixture into the mold (I used a mold for chocolate) and refrigerate for about an hour.
  • Remove the chocolate from the mold.
  • It keeps perfectly in aluminum foil in the refrigerator.

Si avvicinano le feste e cosa c'è di meglio per festeggiare di una buona barretta di cioccolato fatta in casa, con ingredienti crudi, piena di gusto e ricca di elementi nutritivi?
Per farla non ho usato zucchero, ma ho dolcificato con lo sciroppo d'acero e la polvere di lucuma, un frutto dell'altopiano peruviano dal sapore dolce e con una leggera nota di vaniglia, ottimo dolcificante naturale. E' ricco di carboidrati complessi, fosforo, calcio, beta carotene e ha un basso indice glicemico.

Tavoletta di cioccolato crudo
Ingredienti
  • 100 gr di pasta di cacao cruda
  • 100 gr di burro di cacao crudo
  • 40 gr di cacao crudo in polvere
  • 40 gr di carruba cruda in polvere
  • 4 cucchiai di sciroppo d'acero
  • un  cucchiaio di polvere di lucuma
  • un cucchiaino di cannella
  • un pizzico di sale
Preparazione
  • In una casseruola a bagno maria mettere la pasta di cacao ed il burro di cacao e a fuoco molto basso far sciogliere il tutto mescolando bene, ci vorrà circa mezz'ora. E' importante non superare mai la temperatura di 42°C: in questo modo si manterranno intatti importanti nutrienti presenti nel cacao come magnesio, flavonoidi, enzimi e amminoacidi. Si può utilizzare un termometro da cucina per controllare la temperatura.
  • Aggiungere il cacao,la carruba in polvere e il sale mescolando lentamente con l'aiuto di una frusta.
  • Spegnere il fuoco  e aggiungere la lucuma, la cannella e lo sciroppo d'acero continuando a mescolare.
  • Versare il composto nell'apposito stampo (io ho utilizzato uno stampo per cioccolata) e mettere in frigo per circa un'ora.
  • Staccare la cioccolata dallo stampo.
  • Si conserva perfettamente nella carta stagnola in frigorifero.
