Plantain Chips


Is there a tasty yet healthy comfort food to munch while watching a good movie on TV? I think so! I recently discovered the plantain tree and you can use its fruit to make great healthy homemade chips.

Plantain Chips
Ingredients
  • Plantains
  • Extra Virgin Olive Oil
  • Sea Salt
Preparazione
  • Peel the plantains and cut into thin round slices (about 0,4-0,7 inches) 
  • Put the slices in water with a little salt for about half an hour. 
  • Drain well and place in a large bowl. Add olive oil, salt and mix well. 
  • In a baking pan lined with parchment paper, arrange the slices next to each other and bake at 350° F for about 20 minutes. About halfway through cooking, turn the slices on the other side, in order to obtain a uniform browning. 
  • Serve warm or cold.

    Esiste un comfort food sano e gustoso da sgranocchiare davanti alla tv guardando un bel film? Direi proprio di sì! Ho da poco scoperto il platano e con questo frutto tropicale si possono fare delle ottime patatine cotte al forno ideali per concedersi uno snack sano fatto in casa.

    Patatine di Platano
    Ingredienti
    • Platani
    • Olio extra vergine di oliva
    • Sale
    Preparazione
    • Sbucciare il platano, e tagliarlo a fettine circolari sottili (circa 1-2 cm)
    • Mettere le fettine a bagno in acqua con un po' di sale per circa mezz'ora.
    • Togliere le fettine di platano dall'acqua, scolarle bene e metterle in una ciotola capiente. Aggiungere l'olio di oliva, il sale e mescolare bene.
    • In una teglia rivestita con carta da forno disporre le fettine una accanto all'altra e infornare a 180°C per circa 20 minuti. A circa metà cottura girare le fettine, in modo da ottenere una doratura omogenea.
    • Servire tiepide o fredde.

    Raw Lime Mini Cakes


    Here's an easy to prepare raw treat that perfectly goes along these first sunny days that I always feel like a first taste of a long-awaited summer. The taste of lime and the sweetness of the cream gives this recipe a fresh and summery flavour.

    Raw Lime Mini Cakes
    Ingredients
    crust
    • 1 cup macadamia nuts
    • 1/2 cup dried shredded coconut
    • 1/2 cup sprouted buckwheat, dried
    • 1/8 teaspoon sea salt
    • 6 soft medjool dates, pitted and choppped
    • 2 tablespoons maple syrup
    filling
    • 1 1/2 avocado
    • 1 1/2 soaked cashew (at least 5 hours)
    • 1/4 cup lime juice
    • 2 tablespoons organic lime zest
    • 1/3 cup maple syrup
    • 1/4 teaspoon sea salt
    • 1 teaspoon vanilla powder
    • 1/4 cup raw coconut oil (warmed to liquid)
    Preparation
    • For the crust combine all ingredients in a food processor and mix into a dough.
    • Press the dough to the bottom of six small springform of approximately 3 inches and place in the freezer while you prepare the filling.
    • For the filling combine all ingredients in a food processor and mix until smooth. Scoop onto the crust, and place in the freezer to firm up for about two hours.

    Ecco un dolce raw semplicissimo da preparare e perfetto per accompagnare questi primi giorni di caldo e sole che anticipano, almeno per me, la tanto attesa estate. E' un dolce fresco ed estivo grazie all'utilizzo del lime che si sposa perfettamente con la dolcezza della crema.


    Raw Lime Mini Cake
    Ingredienti
    per la base
    • 150 gr di noci macadamia
    • 75 gr di cocco in scaglie
    • 80 gr di grano saraceno (lasciato in ammollo per 2 ore quindi essiccato per 12 ore)
    • un pizzico di sale
    • 6 datteri medjool
    • 2 cucchiai di sciroppo d'acero
    per la crema
    • 2 avocado
    • 200 gr di anacardi (lasciati in ammollo per almeno 5 ore)
    • il succo di due lime
    • buccia grattugiata di due lime
    • 80 ml di sciroppo d'acero
    • un quarto di cucchiaino di sale
    • un cucchiaino di polvere di vaniglia
    • 1/4 cup di olio di cocco
    Preparation
    • Per la base unire tutti gli ingredienti in un robot da cucina fino a quando il composto non risulterà omogeneo e simile a un impasto.
    • Dividere in sei porzioni e schiacciare bene in sei formine di circa 7 centimetri di diametro. Lasciare indurire in freezer mentre si prepara la crema.
    • Per la crema, unire tutti gli ingredienti in un robot da cucina fino a quando il composto non risulterà cremoso. Versare la crema sulle sei basi e lasciar indurire nel freezer per circa due ore.

    Raw Pistacho Baklava


    Today I'm going to show you a particularly rich treat from the traditional Arabic and Balkan cuisine. It's called baklava and it's originally made of phyllo dough, butter, honey, pistachios and other nuts. 
    The raw version is much lighter and simpler than the traditional version but managed to keep the original taste intact. Whether you've already tried it or not, this version will surely win you out.

    Raw Pistachio Baklava
    Ingredients
    for phyllo dough
    • 1 1/2  cup soaked cashews (at least 6 hours)
    • 2 tablespoons lemon juice
    • 1/4 teaspoon sea salt
    • 2 tablespoons maple syrup
    • 1/2 cup water
    • 1 teaspoon powder vanilla
    for pistachio filling
    • 1 1/2 cup pistachios
    • 1/4 teaspoon salt 
    • 4 tablespoons maple syrup
    • 1 tablespoon lemon juice
    • 1/4 teaspoon clove powder
    Preparation
    • For the phyllo dough, blend all ingredients until smooth and creamy. Then pour on dehydrator sheet, and carefully spread around with a spatula until mixture covers most of the sheet in a thin, consistent layer. Dehydrate at 115 F°degrees for a full 12 hours. The sheet should not be fully dry: you want it to be soft enough to cut it while avoiding the risk of having it crumble apart.
    • For the pistachio filling, lightly process the pistachios, salt, and spices first. Add the rest of the ingredients and continue processing until mixture is consistent and pistachios are still slightly chunky.
    • Carefully cut the dehydrated phyllo dough into 4 sheets of the same size, then divide the pistachio filling into 3 portions of approximately the same size. Put one sheet of phyllo dough as the bottom layer, then take one of the three portions of the filling and spread it gently (it's easier by hand) on top of it. Continue putting another layer of phyllo dough and alternate the phyllo dough and the pistachio filling until you run out of both. Now, with a sharp serrated knife, carefully cut into 8 rectangular pieces of the same size.

    Oggi vi propongo un dolce tipico della cucina araba e balcanica particolarmente ricco e goloso, composto da strati di pasta fillo con burro, zucchero e miele alternati a pistacchi o altri tipi di frutta secca.  La versione cruda è sicuramente più leggera e semplice pur riuscendo a mantenere il sapore originale. Se avete già mangiato questo dolce o se non l'avete mai provato prima, questa versione cruda vi conquisterà sicuramente.

    Baklava crudo al pistacchio 
    Ingredienti
    per la pasta fillo
    • 220 gr di anacardi (ammollati per almeno 6 ore)
    • 2 cucchiai di succo di limone
    • un pizzico di sale
    • 2 cucchiai di sciroppo d'acero
    • 120 ml di acqua
    • 1 cucchiaino di polvere di vaniglia
    per il ripieno di pistacchi
    • 185 gr di pistacchi crudi
    • un pizzico di sale
    • 4 cucchiai di sciroppo d'acero
    • un cucchiaio di succo di limone
    • un pizzico di polvere di chiodi di garofano 

    Preparazione
    • Per la pasta fillo, mescolare tutti gli ingredienti fino a ottenere un composto cremoso. Mettere il composto su un foglio di carta da forno e allargare con una spatola fino a coprire la maggior parte del ripiano con uno strato sottile ma uniforme. Essiccare per 12 ore a 45 C°. Per evitare il rischio che al momento del taglio il foglio di pasta si sbricioli, è utile verificare che non sia completamente asciutto.
    • Per il ripieno di pistacchio, tritare leggermente i pistacchi, il sale e i chiodi di garofano. Aggiungere il resto degli ingredienti e continuare a tritare fino alla formazione di un composto non troppo omogeneo, con pezzi di pistacchio ancora visibili.
    • Con molta attenzione, tagliare il foglio di pasta fillo in 4 fogli delle stesse dimensioni e dividere il ripieno di pistacchi in 3 porzioni uguali tra loro. Mettere un foglio di pasta fillo come base, aggiungere sopra una porzione di ripieno di pistacchi e allargare fino ad occupare tutto lo spazio del foglio (è più facile se si usano le mani!). Continuare così, alternando fogli di fillo e ripieno fino alla fine del composto. Con un coltello, tagliare il dolce in 8 pezzi più piccoli della stessa grandezza.

    Raw Kale Chips



    I discovered this delicious raw treat a few years ago in London. And it only requires a few ingredients and kale, that's easy to find in this season. Easy to prepare, light and super crisp, here is a great alternative to french fries!

    Raw Kale Chips
    Ingredients
    • a large bunch of kale
    • 4 tablespoons lemon juice
    • 3 tablespoons nutritional yeast
    • 1/2 teaspoon sea salt
    • 4 tablespoons extra virgin olive oil

    Preparation
    • Rinse the kale and spin dry. Remove the stems and tear into bite-size pieces.
    • Let the kale air out as much as possible before dressing.
    • Put kale and seasoning in to a large bowl and mix well using your hands to ensure the leaves are well dressed.
    • Place the kale on the dehydrator trays.  Dehydrate at 118°F degrees overnight or until dry and crispy.
    • Place it in an airtight glass container with a lid and seal up the kale chips.

    Ho scoperto questa delizia crudista qualche anno fa a Londra. Bastano pochi ingredienti e una verdura che si trova con facilità in questa stagione: il cavolo nero. Facili da preparare, leggere e super croccanti, ecco un'ottima alternativa alle patatine fritte!

    Patatine crude di cavolo nero

    Ingredienti
    • un grosso cavolo nero
    • 4 cucchiai di succo di limone
    • 3 cucchiai di lievito alimentare in scaglie
    • mezzo cucchiaino di sale
    • 4 cucchiai di olio extravergine d'oliva

    Preparazione
    • Lavare le foglie del cavolo ed asciugarle bene nella centrifuga. Rimuovere il gambo e tagliare le foglie in pezzi e lasciarle asciugare completamente prima di proseguire.
    • Mettere le foglie in una ciotola capiente ed aggiungere il resto degli ingredienti, mescolando bene con le mani in modo che le foglie siano ben rivestite.
    • Mettere il cavolo nell'essiccatore e lasciare ad essiccare a 47°C per una notte intera o fino a quando le foglie risulteranno completamente asciutte e croccanti.
    • Per mantenerle croccanti conservare in un contenitore di vetro con coperchio a chiusura ermetica.

    My Sugar is Raw on tour - Paris - Take 2






































    A Parisian mid-January weekend gave me a lots of new things to write about, some really interesting vegan places to chose from: compared to a few years it really looks the French capital is becoming more and more vegan. Some had already been covered here, while others were pleasant discoveries of this trip. The only sour note was not having more time to try all the new places.

    Un weekend Parigino di metà gennaio ci ha fornito tanto nuovo materiale per suggerirvi alcuni posticini vegani e crudisti davvero interessanti e ormai sempre più numerosi nella capitale francese. Di alcuni avevamo già parlato qui mentre gli altri sono stati davvero delle piacevoli scoperte. L'unica nota dolente del viaggio è stata non avere più tempo a disposizione per provare tutte le novità con la giusta calma.


    Our first stop was Vegan Folie's, a vegan bakery just around Place de la Contrescarpe on the Left Bank. The place is small the owner managed to carve out a space for a couple of stools and a coffee table. It certainly is not one of those bakeries where you can sit in front of your cup of coffee for hours but the desserts are good and worth the detour: muffins, brownies, cheesecake, all 100% vegan :)

    La nostra prima tappa è stata Vegan Folie's, una pasticceria vegana dalle parti di Place de la Contrescarpe, sulla rive gauche. Il posto è piccolo piccolo e anche se sono riusciti a ritagliare uno spazio per un paio di sgabelli e un tavolino, non si tratta certamente di una di quelle pasticcerie dove ritagliarsi un momento di pausa magari di fronte a un caffè. I dolci però sono buoni e valgono la deviazione: muffin, brownie, cheesecake, tutto vegano :)





    We arrived pretty much at the end of the day, and there was no cake left: we tried a chocolate brownie, a cupcacke with peanut and chocolate frosting and a chocolate chip cookie. You can have the organic drinks like coconut water, organic coca-cola from fair-trade market, fruit juice and rice milk. We came back the next day to try the famous cheesecake and lemon tart, wich proved tasty and not too heavy.

    Quando siamo arrivati eravamo praticamente alla fine della giornata e non c'era più nemmeno una torta: abbiamo provato un brownie al cioccolato, una cupcacke con frosting di arachidi e cioccolato e per chiudere un cookie al cioccolato. È possibile consumare delle bevande biologiche come acqua di cocco, coca-cola bio del mercato equo solidale, succhi di frutta e latte di riso. Siamo riusciti a ritornare il giorno successivo per provare le famose cheesecake e la tortina al limone: ingredienti semplici per un risultato buono e non troppo pesante.





    Next day, breakfast at Le Pain Quotidien on rue des Archives. Our first idea was to have the classic selection of breads , but we found a strong menu of vegan options and we decided to try them: from the seasonal specialties we have a Banana Split Detox du Matin (banana, organic granola, organic soy yogurt, agave syrup, organic turmeric and organic spirulina bio) amd from the regular menu we had a banana porridge with organic pecans and coconut sugar, a glass of soy milk and a fresh squeezed orange juice do drink. The banana split was great, very energetic but light and tasty. The porridge was very good too and the portion just were just right. It is also worth mentioning the possibility of a 100% vegan Sunday Brunch.
    What a nice surprise! We were literally blown away by the vast choice of vegan options available there.

    Il giorno dopo, colazione al Pain Quotidien di rue des Archives: la nostra prima idea era di prendere la classica selezione di pani, ma abbiamo trovato una forte presenza di piatti vegani, e abbiamo deciso di provarli: dal menu delle specialità di stagione abbiamo scelto il Banana Split Detox du Matin, (banana bio, granola bio, yogurt di soja, sciroppo d'agave bio, curcuma bio e spirulina bio) mentre dal menu normale un porridge alla banana bio con noci pecan e zucchero di noci di cocco bio, da bere un bicchiere di latte di soia fresco e una spremuta d'arancia fresca. Il banana split era ottimo, gli ingredienti di qualità e il risultato è stato un piatto molto energetico ma leggero e piacevole. Il porridge era molto gustoso, la porzione giusta per sentirsi sazi ma non appesantiti. Da segnalare anche la possibilità di un brunch domenicale con un'opzione cento per cento vegana.
    Siamo rimasti piacevolmente colpiti dall'ampliamento della scelta vegana che nel corso degli ultimi anni è migliorata moltissimo.







    For lunch we tried Sol Semilla: we had the dish of the day (cereal, legume salad with potatoes and superfoods, acai caviar) and a comfort soup with locust beans and Peru cumin, and some apple juice with spirulina. In order not to miss anything, we closed with a sweet cocoa raw sweet. Outstanding quality, fast and courteous service, with the ability to buy super foods directly instore.

    A pranzo è stata la volta di Sol Semilla: abbiamo provato il piatto del giorno (grano saraceno, insalata di legumi, patate e caviale d'acai) e una zuppa comfort con carrube del Perù e cumino, da bere un succo di mela con spirulina. Per non farci mancare nulla abbiamo chiuso con un dolce raw al cacao. Qualità eccezionale, servizio veloce e cortese, con la possibilità di comprare super foods direttamente nel locale. 











    The last stop of the day was at the covered market of Batignolle where we headed to My Kitch'n, a simple and small place with a big soul. We didn't have much time so we had the Green Machine smoothie (spinach, peppermint, avocado, apple, spirulina, dates and flax seeds) and the Vitaminé (apple, carrot, orange, pineapple, dates and maca). Fresh ingredients, very balanced and refreshing taste, really good and original overall. Next time we'll surely try the lunch options, especially the veggie burgers! If you happen to be in Paris, do not miss this very original vegan restaurant!

    Ultima tappa del giorno al mercato coperto di Batignolle dove siamo andati da My Kitch'n, un posto molto semplice ma con un'anima. Il pochissimo tempo a disposizione ci ha fatto optare per due smoothie: il Green Machine (spinaci, menta piperita, avocado, mela, spirulina, datteri e semi di lino)  e il Vitaminé (mela, carota, arancia, ananas, datteri e maca). Ingredienti freschissimi, gusto molto bilanciato e rinfrescante, davvero buoni ed originali. La prossima volta una tappa con più calma qui è d'obbligo per assaggiare tra l'altro i meravigliosi veggie burger! Se capitate a Parigi non perdetevi questo originalissimo ristorantino vegano!
